Pumpkin Cookies


One of my favorite fall recipes is shown below. One of my MOPS friends made it for a Girls Night Out last year and it has been raved about since.


1 cup butter or margarine                         2/3 cup brown sugar 

1/3 cup granulated sugar                             1 cup canned pumpkin 

1 large egg                                                    1 teaspoon vanilla 

2 cups all-purpose flour                              1 1/2 tsps pumpkin pie spice 

1 teaspoon baking powder                         1 teaspoon baking soda 

1/4 teaspoon salt                                         1 cup white chocolate chips 

(can add walnuts too if you want)



Heat oven to 350 degrees. In large mixing bowl, beat butter and sugars on medium speed, scraping bowl often, until creamy. Add pumpkin, egg and vanilla, mixing to combine.


In small bowl, whisk together flour, pumpkin pie spece blend, baking powder, baking soda and salt. With mixer on low speed, add flour mixture, beating and scraping bowl often until well mixed. Mix in chips (and nuts) with a spoon.


Drop dough by rounded spoonfuls onto un-greased cookie sheets. Bake 8 to 10 minutes. Cool on wire rack.


Sprinkle with cinnamon sugar (if desired)


Makes about 3 dozen cookies.


Pumpkin Pie Spice Blend: Combine 1/2 tsp ground cinnamon, 1/4 tsp ground giner, 1/8 tsp ground nutmeg, 1/8 tsp ground allspice
